Middle East cooking

Because I'm teaching about the Middle East right now, I decided to try some food from that area.I made Tabouli and Couscous with Spiced Zucchini.  The Tabouli wasn't that impressive, but I loved the couscous.  I'm going to make more of that.  It's so easy to use and a nice substitute for rice or potatoes.

  1. Looks great! I just love couscous! MY favorite is a recipe that I made up, though.

Saute mushrooms and green onions together with a little bit of olive oil (however much you like).
Coursely chop pistachios (about a handful)
Mix mushrooms, onions and pistachios into couscous.
Squeeze juice of one lemon on top.
    Salt and pepper to taste.
If the couscous is a little dry add a splash of olive oil.

    Delish!
